Grapefruit & Fennel Salad

This spring salad features seasonal arugula, grapefruit, fennel and asparagus. The herbs and light citrus dressing make for a delicious, flavorful and refreshing dish that is easy to put together, looks gorgeous and is rich in feel-good vitamins, minerals, electrolytes and fiber. Ingredients:

  • Arugula

  • Fennel (bulb)

  • Basil

  • Parsley

  • Grapefruit

  • Spring onion

  • Hemp seeds

  • Dried dill

  • Sea salt flakes

  • Pepper

  • Olive oil

Directions:

  1. Lay a bed of arugula on your favorite plate

  2. Sprinkle basil and parsley leaves on top

  3. Add thinly sliced spring onion and fennel

  4. Separate grapefruit into wedges, removing skin and pith. Cut each individual wedge in half for easy, bite-size pieces.

  5. Sprinkle hemp seeds on top and add salt and pepper to taste

  6. For the dressing, whisk grapefruit juice with extra virgin olive oil and toss in the salad.
