Grapefruit & Fennel Salad
This spring salad features seasonal arugula, grapefruit, fennel and asparagus. Ingredients:
Arugula
Fennel (bulb)
Basil
Parsley
Grapefruit
Spring onion
Hemp seeds
Dried dill
Sea salt flakes
Pepper
Olive oil
Directions:
Lay a bed of arugula on your favorite plate
Sprinkle basil and parsley leaves on top
Add thinly sliced spring onion and fennel
Separate grapefruit into wedges, removing skin and pith. Cut each individual wedge in half for easy, bite-size pieces.
Sprinkle hemp seeds on top and add salt and pepper to taste
For the dressing, whisk grapefruit juice with extra virgin olive oil and toss in the salad.
