Easy Lentil Soup

Growing up in Greece, lentil soup, or fakies, was a staple dish in the winter. High in folate, iron and vitamin B, lentils help support heart health. They are also high in magnesium, zinc and potassium which are especially important in the colder months.

This lentil soup is also a great dish to add any vegetables you have in your fridge - carrots, celery and potatoes are commonly added. In this case, I have added hannah sweet potatoes for some added flavor and kept the rest of the recipe fairly simple.

Ingredients:

  • 3 tablespoons extra virgin olive oil

  • 400g green lentils

  • 1 onion

  • 1-2 garlic cloves

  • 1 hannah sweet potato

  • 2 - 3 bay leaves

  • salt, pepper and balsamic vinegar to taste

Directions:

  1. Soak lentils overnight or boil for 5-10 minutes in a small saucepan.

  2. In a larger pot, heat the olive oil and add onion, garlic, bay leaves and the sweet potato and sautée for a few minutes until soft.

  3. Add the lentils, salt and pepper and bring to a boil

  4. Reduce heat and simmer for 30-45 minutes until lentils and potatoes are cooked through

  5. Remove bay leaves

  6. Serve with a drizzle of olive oil and a splash of balsamic vinegar
